Head of food, Marc, has made a pretty special limited-edition pie for the start Spring (hopefully this'll kick start the spring weather - anyone else had enough of the rain?! 🌧️).
This Smokin' Beef Brisket Pie was created first for Chunk directors, Simon and Suzi, when Marc first interviewed for the job last year and everyone was blown away! Not a day went by without this magic pie being mentioned and we’ve been eagerly awaiting the moment it was recreated ever since… That day has come and we’re itching to share it with our loyal troop of pie lovers.

If you don't know what pit beans are (neither did we until Marc educated us!) then let us enlighten you. Cannellini beans are sautéed with onions, garlic, smoky bacon, a sprinkling of paprika and thyme, before being combined with the lovely juices from the slow-cooked beef brisket. The reason for the name pit beans is that they were traditionally cooked in... you guessed it - a pit!! Clay bean pots were buried in small dugout holes called bean pits with hot coals.

And Marc’s extra special recipe stipulates that the beef brisket is rubbed in chocolate and coffee before being cooked 72 hours in a sous vide for a beautiful depth of flavour. Available in a box of 8 and on its own to mix and match with the classics, you’ll simply have to give it a try!

Marc recommends serving this sensational pie with a tasty slaw. Shred some red cabbage, apple and onion and whip up a creamy mayonnaise for slathering. Throw some chunky sweet potato wedges on the side and you have a delightful dinner bursting with flavour.
