What EvenĀ Is Haggis?
Haggis is Scotlandās most iconic dish, lovingly referred to as the "chieftain oā the pudding race" thanks to Robert Burnsā ode to it.
Traditionally made from sheepās pluck (thatās heart, liver, and lungs for the uninitiated), oatmeal, suet, onions, and spices, haggis is like the scrappy underdog of cuisine š Proof that creativity and thrift can make magic in the kitchen!!
Itās all boiled up in a casing (once a sheepās stomach, now usually artificial), and served with pride.
Haggis became synonymous with Burns Night because of Scotland's national poet, Robert Burns. His poem "Address to a Haggis" glorifies the dish as a symbol of Scottish pride, identity, and resourcefulness.
For centuries, Scots have celebrated Burnsā legacy by tucking into haggis alongsideĀ neeps and tatties (mashed turnips and potatoes, for the non-Scots among us) and raising a glass of whiskyĀ š„
